SPICY GREEN CHILI SLAW

Serves 6

  • 6 cups (1/2 head) finely shredded green cabbage (we like savoy)
  • 1 to 2 Serrano or Jalapeño chilis, thinly sliced crosswise 
  • 6 tablespoons fresh lime juice
  • 3 tablespoons vegetable oil 
  • 1 tablespoon sugar
  • 1/2 teaspoon kosher salt
  • 3/4 teaspoon black pepper 
  • Lime wedges (options) 
  • Sweet paprika or cayenne pepper (optional) 
  •  
  • In a large bowl, mix together the cabbage and sliced green chilis. Set aside. 
  • In a small bowl, whisk together the lime juice, oil, sugar, salt and pepper
  • Pour over the cabbage-chili mixture and blend well.  Cover and refrigerate for about an hour, tossing once or twice before serving.
  • Taste for salt or pepper before serving and garnish with lime wedges and sweet paprika if you like.  This slaw goes well if our Spicy Baby Back Ribs
