Jalfrezi Shrimp with Scallions

Serves 4

  • 2 tablespoons vegetable oil
  • 4 scallions, trimmed and cut into 2-inch pieces
  • 1 lb large shrimp, peeled and deveined
  • 1 container Maya Kaimal Jalfrezi Curry
  • Chopped cilantro (optional)
  • In a medium-sized covered skillet or Dutch oven, heat the vegetable oil over medium. Add the scallions and sauté for 1 minute. Add the shrimp and sauté until shrimp just begin to turn pink.
  • Add Maya Kaimal Jalfrezi Curry, cover and simmer over low heat, stirring occasionally, until the shrimp is cooked through, 5 to 8 minutes.
  • Serve over couscous or basmati rice. Garnish with cilantro, if you like.
