Spicy Baby-Back Ribs

Serves 4

  • 4 racks baby-back pork ribs (about 1 lb per rack)
  • Water and salt
  • 1 cup Maya Kaimal Spicy Ketchup
  • 1/4 cup apple cider vinegar
  • 3 tablespoons brown sugar
  • 3 tablespoons Worcestershire sauce
  • 2 teaspoons smoked paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • Prep the Ribs: We like to cook the ribs until they are tender (in an Instant Pot or on the Stovetop) and then glaze them with our Spicy Ketchup Barbecue Sauce (over a hot grill or under an oven broiler). Choose the cooking methods below that work best for you.
  • To cook in an Instant Pot, cut each rack in half, (about 4 ribs each) Place ribs in an Instant Pot with 1 cup water and 1 teaspoon salt. Close securely and set to Meat/Stew, about a 30-minutes. When the cook time is up, carefully release pressure and open the lid. Remove the ribs and discard liquid. The ribs are ready to be glazed.
  • To cook on the stovetop, cut each rack in half. Place ribs in a large pot and fill pot with enough water to cover ribs plus 1 teaspoon salt. Bring water to a boil, reduce heat, cover and simmer for 1 hour and 15 minutes, or until ribs are fork tender.
  • Make the Glaze: In a medium saucepan, combine the remaining ingredients and bring to a boil. Reduce heat and simmer, uncovered, stirring often, for 15 minutes or until slightly thickened.
  • Finish the Ribs: Preheat oven over broiler to high or prepare an open grill (see note).
  • To glaze the ribs in an oven broiler, place the warm, pre-cooked ribs, meat-side down, on a foil-covered broiler pan. Brush with half the sauce mixture and broil 5 to 6-inches from heat for 6 to 7 minutes. Turn ribs over, brush with remaining sauce, and broil additional 6 to 7 minutes, or until edges are slightly charred.
  • To glaze the ribs on an open grill, oil the grates right before cooking. Place the warm, pre-cooked ribs, rib-side down, on the grill grates. Brush with half the sauce mixture and grill for 5 minutes. Carefully turn ribs over, brush with remaining sauce, and grill additional 6 to 7 minutes, or until edges are slightly charred.
