Chicken Tikka Masala Sliders

Yield: Serves 4

1 jar Maya Kaimal Tikka Masala Indian Simmer Sauce
1 lb. boneless skinless chicken thighs
2 cups yellow onion thinly sliced
3 tbsp butter unsalted
1/2 tsp salt
1/4 tsp black pepper
squeeze of lime
6 oz. fried onion strings store bought
buns of your choice (pretzel buns recommended)

Instant Pot
Turn Instant Pot to Sauté mode and once hot, add 3 tablespoons of butter.
 
When butter is melted add the sliced onions and 1/2 teaspoon of salt. Cook onions for about 5-6 minutes until they are nice and caramelized. Once onions are golden brown turn Sauté mode off.

Add the chicken thighs and the simmer sauce. Close the lid and cook the chicken for 12 minutes on Manual mode or Poultry mode if that’s the setting on your Instant Pot.

Once done, let the pressure naturally release for 5-10 minutes, and then do a Quick Release.

Open the lid and shred the chicken using two forks. Add a nice squeeze of lime, black pepper and more salt if necessary. You can also add some cayenne pepper or hot sauce if you want a little more spice.

Assemble sliders on your choice of buns with pickles, arugula, lettuce (or slaw mix) and fried onion strings. Don’t forget the fried onion strings!

Crock Pot/Slow Cooker
Caramelize onions in a skillet in 3 tablespoons of butter until golden brown.

Transfer onions to the slow cooker along with chicken and sauce. 

Cook on high for 4 hours until chicken is no longer pink and shreds easily.

Shred and assemble onto buns in same manner as with the Instant Pot version.
