KERALA GARAM SIMPLE SYRUP
Yield, scant 2 cups
- 1 cup sugar
- 1 cup water
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon cloves
- 1 cinnamon stick (3-inches)
- 5 cardamom pods, crushed
- 2 star anise whole pods
- 1 teaspoon fennel seeds, lightly crushed
- Combine all ingredients and bring to a boil in a small saucepan. Reduce heat, and simmer 5 minutes.
- Remove from heat. Let cool completely then cover and refrigerate overnight.
- Strain into 2 cup glass jar and cover with lid.
- Use in your favorite cocktail or in our Indian Spiced Punch with Bourbon.
- Syrup can be refrigerated in an airtight container up to 1 month.
