KERALA GARAM SIMPLE SYRUP

Yield, scant 2 cups

  • 1 cup sugar
  • 1 cup water
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon cloves
  • 1 cinnamon stick (3-inches)
  • 5 cardamom pods, crushed
  • 2 star anise whole pods
  • 1 teaspoon fennel seeds, lightly crushed
  •  
  • Combine all ingredients and bring to a boil in a small saucepan. Reduce heat, and simmer 5 minutes.
  • Remove from heat. Let cool completely then cover and refrigerate overnight.
  • Strain into 2 cup glass jar and cover with lid.
  • Use in your favorite cocktail or in our Indian Spiced Punch with Bourbon.
  • Syrup can be refrigerated in an airtight container up to 1 month.
