Spicy Vindaloo Meatballs with Rice

These Spicy Vindaloo Meatballs with Perfectly Plain Rice is the perfect quick and easy weeknight dinner. This dish coms together in 30 minutes thanks to Maya Kaimal’s Indian simmer sauce and Surekha Rice that is ready in just 90 seconds. Flavorful meatballs swim in a flavorful spicy vindaloo sauce that is packed with flavor and just a little heat. If you need a quick weeknight dinner that is better than takeout, go ahead and add this dish to your menu!
  • 1 pound ground pork
  • 1 1/2 tsp SALT
  • 2 cloves minced garlic
  • 2 tbsp sliced green onion
  • 1/2 tsp red pepper flakes 
  • juice of one lime
  • cracked black pepper
  • 1/2 tbsp avocado oil 
  • 1 cup thinly sliced red onion
  • 1 jar Maya Kaimal Spicy Vindaloo Simmer Sauce
  • 1 cup fire roasted diced tomatoes 
  • 1 cup full fat coconut milk 
  • Maya Kaimal Perfectly Plain Rice
  • cilantro, for serving
  • sliced green onion, for serving
  • fresh lime wedges, for serving


Make the meatballs by combining the ground pork, minced garlic, green onions, salt, pepper, lime juice, and red pepper flakes.

Heat a large skillet over medium-high heat. Once hot, coat the pan with avocado oil and then cook the meatballs until browned and cooked through. Remove the meatballs from the skillet.

Pour off any excess oil from the skillet and then add the thinly sliced onion and 1/4 cup of water. Cook on medium heat until the onion has become tender.

Next add the Maya Kaimal Spicy Vindaloo simmer sauce, coconut milk, and tomatoes to the skillet. Stir and bring to a simmer.

Next, add the meatballs back to the skillet and simmer for 15-20 minutes uncovered. While the meatballs simmer, microwave the Maya Kaimal Perfectly Plain rice and set aside.

Finally, serve the meatballs over the rice and enjoy!
