TIKKA MASALA PANEER SKEWERS
Serves 18
- 1 tablespoon vegetable oil, plus more for the pan
- 8 oz paneer*, cut into 1-inch cubes
- 1/3 cup Maya Kaimal Tikka Masala, plus more if needed.
- 18 short bamboo skewers, more if needed
- Lemon wedges, optional
- Garnish:
- Cilantro sprigs for garnish, optional
- Preheat broiler. Line a baking sheet with a double layer of heavy-duty foil. Lightly brush with the vegetable oil.
- In a medium-sized skillet, heat the vegetable oil over medium heat. Add the cubed paneer and brown lightly on all sides.
- Transfer the paneer to a small mixing bowl. Add the Tikka Masala sauce and gently toss until all the pieces are well coated.
- Thread 2 cubes onto each skewer and place onto the prepared sheet pan with the ends going the same direction. Place a strip of foil over exposed part of the skewers to prevent scorching. Use a pastry brush to dab any of the remaining sauce onto the paneer cubes.
- Broil the skewers until the sauce is bubbling and lightly browned – about 4-5 minutes, keeping an eye on them. Gently loosen cubes with a metal spatula if necessary.
- Serve immediately. Arrange on a tray with cilantro sprigs as garnish, and lemon wedges if you like.
