Madras Turkey Sloppy Joes

We absolutely love this recipe! It’s incredibly easy and can work with any of our sauces. These garnishes are similar to a lot of Indian street snacks, but you could add cheese, pickled jalapenos, or even crispy bacon—all would be delicious!

Serves 4

Ingredients

2 tbsp vegetable oil

1 lb ground turkey

2 small or 1 large potato, diced

1 jar Maya Kaimal Madras Curry

½ cup frozen peas, thawed

12 slider buns or 8 3” burger buns, such as King’s Hawaiian

2 tbsp soft butter

¼ cup chopped cilantro (for garnish)

½ red onion, finely chopped (for garnish)

1 lime, cut into wedges


Preparation

Step 1
In a deep skillet, heat the oil over medium-high. Add the turkey and stir for 3 minutes, breaking it up and lightly browning it.

Step 2
Add the potatoes and Madras Curry, plus about ½ cup of water. Stir well until bubbling and hot. Reduce the heat to low, cover, and simmer for 20-25 minutes, until potatoes are tender.

Step 3
Add the peas and cook for another 2 minutes, uncovered. The mixture should be juicy, so add a little more water if needed. Stir in half of the cilantro, saving the rest for garnish.

Step 4
Heat a griddle or wide skillet over medium heat. Butter both sides of each bun, and place as many as will fit in the pan. Remove when they are golden on the bottom, 1-2 minutes. Repeat until all of them are done.

Step 5
To serve, spoon about 1/3 cup of filling on each bun, sprinkle with cilantro and red onion, squeeze some lime over each, cover with top bun and serve!
