Paneer Tikka Masala Panini

Making sandwiches with last night’s curry is a great way to use leftovers! We used our Tikka Masala Sauce with paneer and added red onion for extra crunch, you could use any of your favorite sauce and toppings.

Serves 2

Ingredients

8 oz paneer, cut into ½” cubes

pinch of salt

1 cup Maya Kaimal Tikka Masala Simmer Sauce

¼ cup coarsely chopped cilantro


To serve:

4 slices of bread (round loaf such as sourdough boule)

red onion slices

Sliced jalapenos (optional)

2 tbsp soft butter


Preparation

Step 1
In a small saucepan, combine the cubed paneer, salt and Tikka Masala Simmer Sauce, simmer for 2-3 minutes. Take the pan off the heat and mix in the cilantro.

Step 2
Heat a panini press or grill pan. (You can use a griddle or cast-iron pan to toast the sandwiches as well)

Step 3
Assemble the sandwiches: Divide the paneer mix between two pieces of bread. Top with sliced onion, and jalapeno slices, if using.

Step 4
Place the remaining 2 slices of bread on the toppings.

Step 5
Spread the outside of the sandwiches with soft butter and toast on the panini press or grill pan until grill marks appear. (Note: Paneer doesn’t melt!)

Step 6
Cut each sandwich in half and enjoy with your favorite chilled beverage or chai!
