Soy Ginger Lettuce Wraps

I love the freshness of lettuce wraps for dinner, and my Soy Ginger Stir Fry can help you make them quickly and flavorfully. Serve them with a side of noodles slicked with sesame oil and scallions or simple steamed rice. Or skip the carbs and enjoy the wraps on their own! This recipe works equally well with our Honey Chili or Hot Garlic Stir Fry Sauces.

Serves 3-4

Ingredients

1 tablespoon vegetable oil


1 lb ground chicken


¾ teaspoon sea salt


½ cup Maya Kaimal Soy Ginger Stir Fry Sauce, plus more for spooning over


½ cup canned water chestnuts, coarsely chopped


3 scallions, white and green parts thinly sliced (reserving some for garnish)


1 head Boston lettuce, baby romaine or other wide-leafed lettuce varieties


Noodles or sticky rice on the side (optional)


Preparation

Step 1
In a cast iron or non-stick skillet, heat the oil over medium-high. Add the ground chicken and salt and stir, breaking apart the meat with your spatula. Cook until lightly browned

Step 2
Add ½ cup of Maya Kaimal Soy Ginger Stir Fry Sauce and continue cooking for 1-2 minutes, stirring occasionally. Add the water chestnuts and scallions, stir to combine. Remove from the heat.

Step 3
Pour the remaining sauce in a small bowl with a spoon for drizzling.

Step 4
Arrange about 3 lettuce cups on each dinner plate. Scoop filling into each one. Top with extra scallion and place on a platter with the bowl of extra sauce. Serve with a side of noodles or rice, if you like.
