Basmati Rice Greek Salad

This super simple salad is perfect to pack for summer picnics and lunches or to serve as a side for your next cookout. We love the classic Greek combo of tomatoes, feta, cucumber, and olives, and adding our aromatic rice to the mix turns it into a more substantial side or meal.

Serves 4-6

Ingredients

1 package Aromatic White Organic Basmati Rice  

6 tbsp extra virgin olive oil

4 tbsp red wine vinegar

2 tsp dried oregano

1 tsp kosher salt, plus more to taste

8 oz plum tomatoes, cubed if large, quartered if small

1 seedless English cucumber, halved lengthwise and sliced into half moons

½ cup crumbled feta

¼ cup pitted, halved kalamata olives

½ cup roughly chopped fresh dill

Freshly ground black pepper


Preparation

Step 1
Cook rice according to package directions.

Step 2
Whisk together olive oil, vinegar, oregano, and salt in a large bowl. Add hot rice and stir to coat. Let cool completely.

Step 3
Stir in chopped tomatoes, cucumber, feta, olives and dill. Season to taste with salt and pepper.
