Grilled Seafood Coconut Curry Wraps

Serves 4

  • ½ lb large peeled shrimp
  • 8 large sea scallops, cut in half, or ¼ lb bay scallops
  • 1 tablespoon olive oil
  • 1 cup Maya Kaimal Coconut Curry
  • 8 flour tortillas (8-inch) or other flatbread
  • Arugula or other flavorful lettuce green
  • Pre-heat grill to medium-high.
  • Toss shrimp and scallops with the olive oil and transfer to a grill basket.
  • Place grill basket on grill and cook for 8-10 minutes, shaking occasionally. Meanwhile, heat the Coconut Curry Sauce in a small sauce pan and warm the tortillas on the grill briefly to make them soft and pliable.
  • To assemble, smear a thick stripe of Maya Kaimal Coconut Curry down the middle of each tortilla, distribute shrimp and scallops among them, top with greens. Roll up and serve with additional warm sauce for dipping.
