JALFREZI SHRIMP WITH SCALLIONS

JALFREZI SHRIMP WITH SCALLIONS
Serves 4
- 2 tablespoons vegetable oil
- 4 scallions, trimmed and cut into 2-inch pieces
- 1 lb large wild shrimp, peeled and deveined
- 1 container Maya Kaimal Jalfrezi Curry
- Chopped cilantro (optional)
- In a medium-sized covered skillet or Dutch oven, heat the vegetable oil over medium. Add the scallions and sauté for 1 minute. Add the shrimp and sauté until shrimp just begin to turn pink.
- Add Maya Kaimal Jalfrezi Curry, cover and simmer over low heat, stirring occasionally, until the shrimp is cooked through, 5 to 8 minutes.
- Serve over couscous or basmati rice. Garnish with cilantro, if you like.
